Olive & Herb Flax Focaccia

Serves 1




1 teaspoon olive oil
1 teaspoon Salt & Pepper
1.5 teaspoons baking powder
1/2 cup flax meal
1/2 cup Parmesan
2 egg
2 tablespoons Dried Basil
5 Black Olives



Mix all ingredients in a bowl. Grease a baking pan, roll the dough into a ball and pat it flat into the base of the pan, as flat and even as possible. (Wet your hands to stop the dough sticking to your fingers.)

Bake at 180C for about 15 - 20 minutes, or until the edges start turning a nice golden brown. Remove from pan and allow to cool on a wire rack (or serve warm).

Texture is like a savoury cake made from wholegrains instead of flour... difficult to describe. It's crumbly rather than chewy, but the eggs keep it bound together. I think if it was spread a little thinner and baked for longer it would turn into something biscuit-like.
