Cream Cheese Pancakes

Serves 2




1 egg
1 gram stevia extract
1/4 teaspoon Cinnamon
29 grams cream cheese



Mix all the ingredients in a blender until smooth. Rest the mixture for 2 mins until all most of the bubbles have subsided. Pour half of the batter into a hot pan greased with butter for 1 pancake, cook for 2 minutes until golden, flip and cook 1 minute on the other side.

I then made the chocolate sauce from http://www.cookmeketo.com/recipes/viewrecipe.php?r_id=20 and covered the pancake, but you could use any sugar free syrup.
